Ok so I'm designing a template based on a acoustical/easy listening guitar thing and I wondered who you guys listen to if you do that play acoustic/easy listening/folk rock?

Paul McCartney is definately one of my favourites. Jack Johnson I think is acoustic and i like some of his work.

David Gilmour, although a very small percentage of his work is acoustic. Try looking for "Smile" by him, it's on his new CD and its a great acoustic song.
