I see it in the VPS control panel, but it installs ubuntu. What's up with that?

So, what you are saying that you are attempting to install Centos 5 but Ubuntu is getting installed instead? Never heard of that one before. If that is actually what happening, (sure you are attempting to install the OS correctly), then you need to open a support ticket in your client area.
