Unusual mail issue

Hello !
Recently I'm facing some mail issues, if anybody can help me ?

I have mailing order forms in about 10-15 pages of my website, and recently I received all those 15 orders at the same time without anything on it ! and I have made it mandatory to fill in the details like write name/address etc. otherwise the mail would not be sent.
And just abt 10 mins ago I received such mail again with nothing on it.

I've also tried to go online and sent some test mails from the website, and it came out fine.

Any Help ?

How do you do that? Client side Javascript or in server side PHP/Perl/Python ? Do you use any form of Captcha?

Well, I created my website using a web builder "websitex5" and No captcha on the website.
