Would changing the A record still allow me to use the sub-domains (i.e. mail.union224.com or calendar.union224.com) or by changing the A record will that not allow me to use them?

yes they do. They list three of them under A (Host) @ 64.233.179.121 @ 66.249.81.121 @ 72.14.207.121 and CNAMES www ghs.google.com Is there anything else I would need to change? Thanks!
