Rocket dock would drive me nuts like that. You can't see the whole window. My dock is call AWN. Short for Avant Window Navigator. And I can make it look like/act however I want. I doubt rocket dock is that customizable.

Stability/Ease of use, go for either a debian based OS or centOS. If you're looking for a totally transparent OS, go for gentoo. If you want totally open source, give openSuse a try. Or if you want a nice mix and don't mind playing around with settings a bit, Fedora is pretty good. I'd suggest...
