What does really 500.shtml and 404.shtml are doing?

They are there to inform visitors to your website that there is a problem.

404 = Requested page does not exist.
500 = Server Processing Error - Could be caused by a "bad" script or as simple as a service you want to use is offline, i.e. mySQL or Mail (Exim)
