I was beta testing a chat application, but had to move it over to my VPS because I couldn't seem to get the Cloudflare SSL option to work on my x10 account. Is it possible to use it?

Yes, it is possible but I believe you have to manually sign up for Cloudflare, and not use the cPanel option, to use the Cloudflare flexible SSL. Just go to Cloudflare's website, sign up, add your website, add all the DNS records, and then change your nameservers on your domain registrar. It should work then.

But.. If I take my domain off of the x10 name servers it won't work on x10

Not really. On Cloudflare, it would initially pickup the current name servers (scan) and store them in a DNS zone file so that it would still connect to your site.
