GDPR European Law and access logs

Hi, I would like to know if being from the European Union (GDPR) I “could” use this hosting without problems.
I use Cloudflare to avoid that in the “access log” the real addresses of the visitors appear, but the real addresses appear without issue.

At the moment my blog is not visible, pending clarification of that doubt, my hosting with x10hosting is temporary until I find a place to host it in Europe.

What can I do to be able to use x10hosting in Europe?
My x10hosting location is located in Chicago

I need a moderator's answer to this question, at least to avoid access logs, my blog has been stopped for weeks

Post in the correct forum and be more specific on your request. "Your website is down and you don't know why". User statistics, (visitors) does not violate EU General Data Protection Regulation.
