Good Fighters?

So I'm looking for some good ol' fighters that ought to provide a challenge and have some pretty good gameplay. At the moment one of my friends keeps recommending the latest Mortal Kombat game, but I thought I'd ask for some opinions before making any purchases.

Got anything else you'd like to throw at me? I'd appreciate it.

Ideally I'd like something that's available on the 360, though a PC based game doesn't bother me much, but online play is definitely a necessity.
