At the moment I'm using google apps with my account hosting here at x10hosting. I'm wondering if my incoming/outgoing mail will be affected if x10hosting gets some downtime.

If your not familiar with Google Apps, you can read about it over here.
http://www.google.com/apps/intl/en/business/index.html

I assume it would because if the mail was sent to mail@mydomain.com and the host was down it couldn't reach MX Entry Records which I had to setup in cpanel. Therefore it couldn't send.

But I'm hoping there is a chance this isn't true.
I don't mind about my website, but I want to keep my emails on my domain reliable.

I believe the MX records for a domain are cached across the internet, similar to DNS records. For example, even if the nameserver at X10 goes down, if someone tries to access your site within a few hours, the internet "remembers" that yoursite.x10hosting.com is equal to a certain IP address. If I'm not mistaken, the same is true for MX records. I'm not sure how mail reacts to this, but I'm pretty sure it will still go through correctly.
