Hello, just wondering how many accounts a person could set up?
If more than one, can they all be set up with the same email address?

Take a read of our TOS, it explains it pretty clearly. You are allowed one free account. You can, however, get a paid hosting account and are allowed to keep your free hosting account as well.

I had read it, but that was a few days ago, been busy and another site I need to make needs a home. However, it'll have it's own domain. Is there a way to add that domain to my account as it's own web site?

Yep. You can set the domain as an Add-On Domain. That will put the website in a directory all its own.
