how do i use the backups i saved from the old site & restore to the new site?

You can use phpmyadmin to restore databses. (IMPORT/EXPORT)

also - when restoring the copp photo gallery/wordpress blog, do I need to re-install the gallery/blog from fantastico on the new site, then use the backups I have to restore data - or does the backup contain the structure files needed to create the forum w/o needing to reinstall the gallery?
