I do love the hosting here, and I am considering going paid hosting next year.

Would I stay on Chopin or move to a different server? For that matter what is the difference between servers?

Paid hosting are on separate servers so in that case it would be moved to a new server.

Well, someone else already mentioned the obvious, but with the paid servers you'll see very little downtime as there are less users on those. That in return, also allows you to run heavier scripts since the servers will have more resources available to them. They will also feel faster.
